We’ve kept things super simple in terms of outdoor kitchen equipment for our RV life. We knew that we needed everything to fit in the “basement” of our motorhome and, of course, to be very portable.
In our first year-plus of living full-time in our rig, I’ve grilled a lot of delicious food with nothing more than an 18′ Weber Jumbo Joe portable grill.
From the most simple dinners of hot dogs and hamburgers to more challenging dinners like paella and even a 14-hour smoked beef brisket, this grill has performed extremely well for us.
We’ve found that the best way to get charcoal going is with a chimney starter, Weber lighter cubes, and a lighter. Having heavy-duty gloves around for dumping and arranging the hot coals is crucial. Here are links to some of the items that we use:
If you’re like us and can’t stand the taste of lighter fluid that permeates the food if not thoroughly cooked off, you’ll love Weber’s Lighter Cubes. Using these cubes ensures that you will avoid these flavors so long as they have fully melted before putting your food on the grill. I can assure you that they melt quickly and it’s a lot easier to see this than to see if the fluid has burned off.
Without a bag to tote our grill or some serious cleaning before each move, our grill wasn’t really portable. While they make a bag for the smaller version of the grill, Weber doesn’t make one for the 18″ Jumbo Joe. This heavy-duty laundry bag does the trick for us:
Aside from these things, we only need decent charcoal, a set of grill tools, something(s) to grill, and time. When it comes to charcoal or hardwood, we’ve had a few misses. While there are some terrific specialty hardwoods available regionally, it’s not always possible to find them when you’re traveling. Finding Kingsford Original on the road is relatively easy and is our recommended brand of charcoal for everyday use.
This setup has worked very well for us. And if you like to practice the KISS (Keep It Simple, Stupid) method of doing things, this might work for you too!
P.S. Whether it’s steak, hamburgers, chicken, shrimp, or vegetables, our all-around favorite seasoning for simple grilling is McCormick’s Grill Mate Montreal Steak. The flavors and course grind offers plenty of salt, a little heat from garlic and peppers, and even an element of umami. We love it!

Great info… I do prefer charcoal too…but need to get that type of grill ☺️
