I love using fruit to make salsa to pair with fish, chicken, or pork. While I provide a recipe below, it’s meant to be used as a guide. There are many ways that you can change up the ingredients to suit your taste.
Ingredients:
- 1-2 cups diced fresh fruit (I generally use mango, papaya, or pineapple or a mix of these things, but you could also try it with strawberries, peaches, etc.)
- 1/4 – 1/2 cup onion family (red onion, white onion, shallot)
- 1/2 cup diced sweet bell pepper
- 1 jalapeno seeded and diced small
- 2-3 cloves minced garlic
- 2-3 Tbs green herbs (chopped cilantro is my favorite but you might also try chives or, in a pinch, sliced green onions.)
- Juice of 1/2 – 1 lime
- 1 Tbs olive oil
- salt & black pepper to season
- honey (optional if the fruit is lacking sweetness)
- avocado diced (optional)
Mix all ingredients in a small bowl being careful to avoid smashing the fruit. Taste frequently to see if the fruit is sweet enough or needs a little honey (or sugar), more lime juice, or more salt & pepper.
Enjoy served with the protein of your choice (or tortilla chips if you prefer).
Looking for an Asian twist? Try substituting the olive oil for sesame oil and using soy sauce instead of salt. Need more heat? Add a little crushed red pepper or a dash of cayenne pepper.
